recipes + tutorial: panda shortbread cookies

Post: August 14, 2021

I have the most delightful Shortbread Cookies to share with you. The first time I enjoyed German Shortbread Cookies was when I studied in Germany. If you’ve never head shortbread cookies, they‘re so different from a traditional chocolate chip cookie. They don’t have a leavening agent like eggs, baking powder or baking soda so they’re very delicate and fragile although the crumb is dense in a way. They’re only 4 ingredients but they’re tender, sweet and buttery. Form them into adorable characters or make them as circles rolled in muscovado sugar!

Most asked questions:

· Are supposed to be so fragile? Yes! These are crumbly and buttery but just firm enough to make into fun character cookies

· What pairs well with shortbread cookies? Jam, Tea and/or coffee pair perfectly!

Prep time: 10 minutes

Cook time: 10 minutes

Servings: 19-12

Ingredients:

· 2/3 C (150 grams) unsalted butter, cut into cubes, slightly soft but cold

· 6 tablespoons (47 grams) confectioners’ sugar

· 1 1/3 cup (200 grams) potato starch

· 3/4 cup (100 grams) cake flour

Instructions:

Step 1 – prep. Line your baking sheets.

How to make shortbread cookies:

Step 2 – cream your butter and sugar. Using a hand or stand mixer, cream the room temperature butter and confectioners’ sugar until pale and fluffy. This takes 2 to 5 minutes. Start on low and slowly increase. Occasionally scape down the sides.

Step 3 – measuring your potato starch and flour. Because flour is commonly mis-measured - you'll want to weight your flour or spoon the flour into your measuring cup, not scoop it straight from the container.

Step 4 – add the sifted potato starch and cake flour into the butter sugar mixture. Occasionally scape down the sides. This will become crumbly. At the crumbly stage, mix with a spatula until the dough comes together. Try pinching some dough between two fingers - does it hold together? If so, your dough is the correct consistency. You could stop at this point. If your dough is dry and not holding together, add 1 tablespoon of water. This often happens when too much flour is added to the dough. And then keep going, it should eventually become smooth. At this point you can skip to step XXXXXX and bake or move forward and form character cookies!

How to make Panda cookies:

Step 5 – make a 2-inch circle for his or her Panda head. You can place this on the baking tray for assembly.

Step 6 – make the eyes. Make small round/oval balls and flatten. Place these on the face.

Step 7 – make the nose. This is just a small ball that I place in between the eyes. This is optional.

Step 8 – make the ears. These are two balls that are slightly bigger than the nose. I think that make these on the small size makes the Pandas seem more Kawaii.

Step 9 – refrigerate. Once the Panda bears are all assembled, cover them with plastic wrap and place in fridge for ½ an hour. This helps everything firm. Pre-heat your oven to 250 degrees Fahrenheit.

Baking the Panda cookies:

Step 10 – bake! Remove plastic wrap and bake for 10 minutes at the preheated 250F. Make sure these are on the middle rack. If the cookies start to brown, tent a piece of foil over the cookies.
